Protein Packed Banana Honey Nut & Seed Bars
Here at the Healthy Mummy, we like to make sure the snacks we recommend in our 28 Day Weight Loss Challenge will really fill you up and give you energy.
These Banana Honey Nut & Seed Bars are chock-full of fruit, nuts and seeds meaning they will fill you up when you are hungry and give you the boost you need to get things done.
When you snack on food like sweet biscuits or chocolate you get the energy boost but then you come crashing down later as the sugar high wears off.
Use protein rich foods to keep your mood stable and you will find that you can get through to your next meal without eating too much and undoing all of your hard work to lose weight.

- 1/2 cup almonds
- 1.5 cup rolled oats
- 1/2 cup pepitas
- 1/4 cup sunflower seeds
- 1/2 cup shredded coconut or desiccated coconut
- 1/4 cup honey
- 2 tablespoons peanut butter
- 2 small bananas approx. 160g
Ingredients

- Preheat oven to 180C and line to loaf pans with baking paper.
- Blitz the almonds for just a second or two to break down slightly.
- Tip into a mixing bowl and add oats, pepitas, sunflower seeds and coconut.
- Blitz honey, peanut butter and bananas together then add to the mixing bowl.
- Stir well to combine.
- Press mixture into trays and bake in preheated oven for 15 minutes (this may vary between ovens).
- Allow to cool COMPLETELY before slicing into 14 bars – this will help to avoid crumbling.
