  • 1.5 cups raw cashews
  • 1 tbsp coconut oil melted
  • 1 tbsp 100% pure maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice

  • 1.5 cups raw cashews
  • 1 tbsp coconut oil melted
  • 1 tbsp 100% pure maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
Easy No Bake Lemon Cashew Cups
Instructions
  1. Soak cashews in cold water for at least 5 hours then drain well.
  2. Blitz all ingredients together until smooth and creamy. You may need to stop and scrape the sides down then continue to blitz a few times.
  3. Spoon into mini silicone moulds and place in the fridge/freezer to set.
  4. Can be kept stored in the fridge or freezer.
