Muffin mixture
  • 1 1/2 cups wholemeal self raising flour
  • 3/4 cup milk of choice
  • 1/2 tsp cinnamon
  • 2 tbsp honey
  • 1 tbsp coconut oil melted
  • 2 eggs
Filling
  • 125 g light cream cheese
  • 1/2 tbsp pure maple syrup
  • 1/4 tsp vanilla essence
  • 2 tbsp pepitas
  • 1 tbsp shredded coconut
  • 2 tbsp cranberries

Instructions
  1. Preheat oven to 180c.
  2. Place all muffin mixture ingredients into mixing bowl and whisk until combined.
  3. Portion mixture across silicon mini muffin tray and bake for 10 minutes or until cooked through.
  4. Remove from muffin tray and allow to cool before cutting a teaspoon size hole in the top of each muffin.
  5. Whisk together cream cheese, vanilla essence and maple syrup.
  6. Spoon a tsp of the cream cheese mixture into the top of each muffin.
  7. Sprinkle each muffin with coconut, pepitas and cranberries.
  8. Store in air tight container in refrigerator for up to 5 days.
