These cookies were created by Healthy Mummy baking competition entrant Shelley Robb, combine wholesome rolled oats, coconut, honey, peanut butter and coconut oil to create a tasty treat that reminds us of a Honey Joy biccie but without all that sugar and butter.

  • 1/4 cup natural peanut butter
  • 1/2 tsp vanilla extract
  • 2 tbsp honey
  • 2 tbsp coconut oil melted
  • 3/4 cup rolled oats
  • 3/4 cup desiccated coconut
  • 20 g dark chocolate 70% minimum

Instructions
  1. Mix peanut butter, vanilla, honey and coconut oil until well combined.
  2. Stir through oats and coconut.
  3. Press firmly into moulds or a small loaf pan and place in freezer to set.
  4. Once set, melt chocolate using your preferred method and drizzle across the top of each cookie.
  5. Place in freezer of fridge to ensure chocolate is set then enjoy!

Recipe makes 12 cookies with 99 calories per cookie (with chocolate drizzle), 93 calories per cookie (without drizzle)

Cookies can be stored in fridge or freezer.

When choosing a dark chocolate, try and find one that is at least 70% cocoa. The higher the cocoa content, the lower the sugar, making 70% and higher bars the best choice.
