5 ingredient peanut butter and pepita bites

Peanut butter adds a richness to snacks that so many of us find irresistible.

But the good thing is that when it’s combined with other healthy ingredients, you can have a nutritious AND delicious snack that will keep you full until your next meal. Just five ingredients (mostly store cupboard basics) is all you need for this simple recipe.

  • 1 cup puffed rice
  • 1/4 cup pepitas
  • 3 tbsp pure maple syrup
  • 1/4 cup peanut butter
  • 1 tsp pure vanilla extract

  • 1 cup puffed rice
  • 1/4 cup pepitas
  • 3 tbsp pure maple syrup
  • 1/4 cup peanut butter
  • 1 tsp pure vanilla extract

Instructions
  1. In a saucepan over medium heat, dry roast the puffed rice and pepitas. Stir continuously for approximately 1.5 – 2 minutes or until they start to change colour. Set aside.
  2. Combine the maple syrup, peanut butter and vanilla extract in a mixing bowl.
  3. Add both mixtures together and mix well.
  4. Using moistened fingers tips, press firmly into small silicone moulds or a loaf tin lined with baking paper.
  5. Place in the fridge or freezer to set.
  6. If using the tin, cut into 12 pieces.
  7. Store in an airtight container in the fridge or freezer
