  • 1 1/2 cups raw cashews
  • 1 cup raspberries fresh or frozen
  • 4 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 5 tbsp coconut flour
  • 1 cup almond meal
  • 1/3 cup shredded coconut
  • 1/3 cup cacao nibs

Ingredients
  • 1 1/2 cups raw cashews
  • 1 cup raspberries fresh or frozen
  • 4 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 5 tbsp coconut flour
  • 1 cup almond meal
  • 1/3 cup shredded coconut
  • 1/3 cup cacao nibs

Instructions
  1. Place cashews in a bowl and cover with water. Soak for one hour.
  2. Drain and rinse the cashews. Place in a food processor and process until smooth.
  3. Gently simmer raspberries and maple syrup in a small saucepan over a medium heat for 2 minutes.
  4. Combine all ingredients in a large mixing bowl (except shredded coconut and cacao nibs) and mix well until mixture comes together.
  5. Roll into approximately 25 small balls and roll in shredded coconut or cacao nibs.
  6. Store in refrigerator in an airtight container.
