Spring Fresh Healthy Thai Fish Cakes Recipe
Fish cakes are a great addition to any healthy eating plan, so we were delighted when Healthy Mummy Community member Sandra Withers sent in her delicious Thai Fish Cakes recipe – YUM YUM!
Sandra says, “When my day is tough and I am struggling as I have been up since 3:30am, cooking dinner is the last thing on my mind, but life goes on!! So this is an easy healthy eating recipe for Thai Fish Cakes that you can also add any vegetables you like to.”

- 500 g white boneless fish Hoki – skinless
- 1 egg lightly beaten
- 1 tsp red curry paste
- 1 tsp green curry paste
- 1 tbsp Arrowroot flour
- 1 tbsp fish sauce
- 5 g coriander paste
- 90 g peas & corn
- 200 g steamed sweet potato – mashed
- Blend fish in food processor, add egg, curry paste, flour, fish sauce, coriander paste, sweet potato and peas & corn.
- Mix together.
- Dry fry in hot non stick pan & finish in a warm oven.
- Serve with a Thai inspired salad.
