So when a craving hit for sweets, Kayla thought ‘how can I make a yummy, low carb protein rich dessert recipe? And then it hits me. Meringue protein bites!’

- 5 egg whites
- 1 tbsp cacao powder
- 1 scoop Healthy Mummy Smoothie mix any flavour (or use Healthy Mummy protein powder)
- 2 tbsp cream cheese or mascarpone cheese
- 1/2 scoop Healthy Mummy Smoothie mix any flavour
- Whisk the 5 egg whites until soft peaks form.
- Using a spatula, gently fold in the cacao powder and the smoothie mix.
- Pipe or spoon the meringue mixture onto a lined baking tray to make 16 small meringues.
- Cook at 120C for 35-40 minutes.
- Use a spoon to mix the cream cheese and the smoothie mix.
- When meringues cool down pipe the cream cheese onto half of the meringues and top with another to make a meringue sandwich.
