  • 1/2 cup self raising flour
  • 1/4 cup desiccated coconut
  • 3 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 3 tbsp coconut oil melted
  • 1 medium ripe banana

Instructions
  1. Preheat oven to 180C.
  2. Line a baking tray with baking paper and set aside.
  3. Combine flour, coconut, coconut sugar and baking power and mix well.
  4. Stir in coconut oil.
  5. Mash banana and add to mixture.
  6. Roll into 12 balls and place on the baking tray.
  7. Flatten slightly with the back of a fork.
  8. Bake for 10 minutes or until golden.
  9. Cool on a wire rack then enjoy.
  10. Store in an airtight container in the pantry for up to 2 days.
