Sweetened with a ripe banana and a little coconut sugar, it’s a world away from processed biscuits from the supermarket (so you can feel good knowing that you’re eating well). And just 82 calories each!

- 1/2 cup self raising flour
- 1/4 cup desiccated coconut
- 3 tbsp coconut sugar
- 1/2 tsp baking powder
- 3 tbsp coconut oil melted
- 1 medium ripe banana
Ingredients

- Preheat oven to 180C.
- Line a baking tray with baking paper and set aside.
- Combine flour, coconut, coconut sugar and baking power and mix well.
- Stir in coconut oil.
- Mash banana and add to mixture.
- Roll into 12 balls and place on the baking tray.
- Flatten slightly with the back of a fork.
- Bake for 10 minutes or until golden.
- Cool on a wire rack then enjoy.
- Store in an airtight container in the pantry for up to 2 days.
