5 Minute Coconut Date Delights
For a snack that is sweet, delicious, filling and fast, these dates are perfect.
Keep medjool dates on hand for when you have a sweet craving – they give you the taste you love without the added sugar found in many commercial treats.
Just 4 ingredients is all you need, and you might even have everything in the pantry already.

Ingredients
- 6 medjool dates
- 2 tbsp unsalted pistachios
- 2 tbsp walnuts
- 2 tsp shredded coconut

Instructions
- Cut dates in half lengthways and remove pits.
- Roughly chop pistachios and walnuts, and combine.
- Fill each date half with nuts. Sprinkle with coconut to serve.
- Serve 6 date halves per person.
