  • 1/2 cup pitted dates
  • 1/2 cup boiling water
  • 1 scoop Healthy Mummy Vanilla Protein Powder or Healthy Mummy Smoothie mix
  • 1/4 cup coconut shredded for rolling

Instructions
  1. Soak dates in boiling water for 5-10 minutes
  2. Place dates (including water) into food processor
  3. Add oats, coconut and Healthy Mummy Protein Powder or Healthy Mummy Smoothie mix into food processor and blitz on high until combined
  4. Transfer mixture into bowl and roll into 16 balls
  5. Roll each ball into extra coconut
  6. Store in air tight container, in refrigerator for up to 7 days or freezer for up to 3 months
