- 1 1/2 cup oats
- 1/2 cup coconut shredded
- 1/2 cup pitted dates
- 1/2 cup boiling water
- 1 scoop Healthy Mummy Vanilla Protein Powder or Healthy Mummy Smoothie mix
- 1/4 cup coconut shredded for rolling
Ingredients

- Soak dates in boiling water for 5-10 minutes
- Place dates (including water) into food processor
- Add oats, coconut and Healthy Mummy Protein Powder or Healthy Mummy Smoothie mix into food processor and blitz on high until combined
- Transfer mixture into bowl and roll into 16 balls
- Roll each ball into extra coconut
- Store in air tight container, in refrigerator for up to 7 days or freezer for up to 3 months
Makes 16 balls at 85 calories per ball.
