Here’s a nut free snack that is both crunchy and delicious. At just 54 calories each you can enjoy a couple for a healthy afternoon tea.

They’re also perfect for the lunchbox too (if you’re willing to share, that is).

  • 2 tbsp rice malt syrup
  • 1.5 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 cup puffed rice
  • 1 tbsp desiccated coconut
  • 15 grams dark chocolate

  • 2 tbsp rice malt syrup
  • 1.5 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 cup puffed rice
  • 1 tbsp desiccated coconut
  • 15 grams dark chocolate

Instructions
  1. Preheat oven to 180C.
  2. Combine rice malt syrup, coconut oil and vanilla extract in a small saucepan. Bring to the boil while stirring, then remove from the heat.
  3. Add the puffed rice and coconut to a mixing bowl and then pour the heated mixture on top, combine well.
  4. Press mixture FIRMLY into mini silicone moulds, patty cases or a small tray lined with baking paper.
  5. Bake in the oven for 8 minutes or until golden.
  6. Remove from oven and allow to cool completely.
  7. Using your preferred method, melt the chocolate and drizzle over the top of the bites.
  8. Allow chocolate to cool and set, then store in an airtight container in the freezer; or in the pantry in a brown paper bag. This will ensure they stay crunchy.
