Lemon Coconut Bites
We love it when community members send in some of the tried and tested recipes they’ve created. This was one sent in by Shelley, who came up with a delicious and zingy snack using some juicy lemons her son had picked off the lemon tree at school! This is a super easy recipe to make and requires no baking! What’s more, these yummy little bites are just 86 calories per serve!
Eating the right snacks is a really important part of a health and weight loss journey. They keep hunger pangs at bay in between meals which also means you’re less likely to over eat at main meal time. Plus, if you have really yummy snacks, you’re less likely to feel deprived and stick to your weight loss goals.

- 3/4 cup pitted dates soaked in boiling water for at least 15 minutes then drained
- 1 cup desiccated coconut
- 1 tsp vanilla extract
- 3 tbsp fresh lemon juice
- 2 tsp refined coconut oil liquified
Ingredients

- Blitz everything together until well combined.
- Press into lined pan (I used a loaf pan)
- Pop in the fridge or freezer to set
- Can be stored in fridge or freezer
- *If you fancy a little bit more sweetness than the dates give, feel free to add a dash of maple syrup, honey etc.
