- 1/2 roast/BBQ chicken shredded
- 1 corn cob kernels off
- 1/2 red capsicum diced
- 1/2 avocado cubed
- 1/2 cup enchilada sauce
- 1/4 cup grated Parmesan
- 2 spring onions sliced
- 1/2 cup kidney beans
- 4 low carb wraps toasted
- 2 tbsp chopped jalapenos
Ingredients

- Preheat oven to 180c
- Place chopped roast chicken, enchilada sauce, corn, capsicum and jalapenos in mixing bowl, stir until combined.
- Pour mixture into baking dish and sprinkle with parmesan cheese.
- Bake for 10 minutes.
- Top with cubed avocado and fresh spring onions.
- Serve with cut up toasted wraps and enjoy.
Serves 3 at 450 calories per serve
