This crepe or pikelet batter recipe is an old faithful, perfect to have on hand for breakfasts and snacks.

Whenever you whip up a weekend pancake breakfast, it’s a good idea to cook a few extra crepes or pikelets to store in the fridge or freezer for later use.

  • 1 egg
  • 1 cup plain wholemeal flour (or spelt, rye or white flour)
  • 1 cup milk
  • Oil or butter for cooking.

Instructions
  1. Combine egg, flour and milk, and whisk until smooth (or blitz in a blender). Set aside to rest for 5 minutes.
  2. Heat a frying pan over a medium heat, not too hot. Add a little oil or butter to coat the pan.
  3. If making crepes, pour in approximately 3 tbsp of mixture and swirl around the pan to the edges. If making pikelets, pour in 1 tbsp of mixture per pikelet.
  4. Place pan back onto the heat and wait for bubbles to form on the outside rim. When the bubbles have formed on 60 per cent of the crepe/pikelet, flip and cook the other side briefly. Repeat with remaining batter.

MAKES 6 MEDIUM-SIZED THIN CREPES OR 18 MINI PIKELETS

Apple Delight

Spread 2 tbsp of Raspberry & Apple Stewed Fruit (recipe in our Healthy Kids Lunch Box Recipes eBook) over a crepe and sprinkle with chia seeds for extra crunch and omega-3 fatty acids. Roll up and enjoy!

Banana Bites

Spread a crepe with 1 tsp tahini or peanut butter, top with 1/2 sliced banana, 1 chopped date and 2 tbsp shredded coconut Roll up and serve, or cut into smaller pieces for little fingers to handle.

Savoury Crepe Combos

Beefy Crepes

Spread a crepe with 2 tbsp of ‘Bouncing Bolognese Sauce’ (recipe in our Healthy Kids Lunch Box Recipes eBook) and sprinkle with 1 tbsp of grated cheese. Roll up and serve.

Hulk Crepes

Stir 1 tbsp of cooked peas through 2 tbsp of Super Green Pesto (recipe in our Healthy Kids Lunch Box Recipes eBook). Spread pesto and pea mixture over a crepe, then roll up and serve.

Sweet Pikelet Ideas

Try these delicious flavour combos on a pikelet:

1. 1 slice of banana and a sprinkle of coconut

Savoury Pikelet Combos

Pikelets are a perfect platform for these savoury combinations:

1. 1 tsp of ricotta, 1 sliced cherry tomato and 1 tsp of grated cheese

2. 1 tbsp of cream cheese and 1 tsp of grated cheese

3. 1 slice of tomato and 1 tsp of grated cheese

4. 1 tbsp of Super Green Pesto (recipe in our Healthy Kids Lunch Box Recipes eBook)

5. 1 tsp of cream cheese and 1 piece of shredded ham or other deli meat
