Lunchbox Friendly Chocolate & Banana Muffins
There are naughty muffins, and there are nice muffins, and THEN there are nice muffins that taste naughty and those are the BEST kind. Especially when you are trying to eat well but you don’t want to give up the yummy sweets and treats that you love.
Today we have this EXCELLENT banana & chocolate muffin recipe for you. Make in bulk for snacks for the family for the week.

Ingredients
- 1 tsp vanilla essence
- 2 large eggs
- 2 tbsp psyllium husks
- ¼ cup cocoa
- ½ tbsp cinnamon
- 150 g coconut flour
- ½ tsp baking soda
- ¼ cup semi sweet chocolate chips
- ½ tsp baking powder
- ½ cup skim milk
- 2 bananas mashed
- ⅓ cup coconut sugar

Instructions
- Preheat oven to 175C and spray a muffin tray with olive oil spray
- Combine all ingredients in a bowl until just mixed.
- Spoon into the muffin tray and bake for 25-30 minutes or until a skewer inserted into the middle comes out clean.
- Cool on a wire rack and then store in the fridge for 2-3 days.
