Ingredients
  • 1 tsp vanilla essence
  • 2 large eggs
  • 2 tbsp psyllium husks
  • ¼ cup cocoa
  • ½ tbsp cinnamon
  • 150 g coconut flour
  • ½ tsp baking soda
  • ¼ cup semi sweet chocolate chips
  • ½ tsp baking powder
  • ½ cup skim milk
  • 2 bananas mashed
  • cup coconut sugar

Instructions
  1. Preheat oven to 175C and spray a muffin tray with olive oil spray
  2. Combine all ingredients in a bowl until just mixed.
  3. Spoon into the muffin tray and bake for 25-30 minutes or until a skewer inserted into the middle comes out clean.
  4. Cool on a wire rack and then store in the fridge for 2-3 days.
