  • 1/3 cup peanut butter
  • 2 tbsp coconut oil melted
  • 2 tbsp pure maple syrup
  • 1/4 cup pumpkin after being steamed and mashed
  • 1/2 tsp cinnamon
  • pinch salt

  • 1/3 cup peanut butter
  • 2 tbsp coconut oil melted
  • 2 tbsp pure maple syrup
  • 1/4 cup pumpkin after being steamed and mashed
  • 1/2 tsp cinnamon
  • pinch salt
Dreamy and Creamy Healthy Pumpkin Fudge
Instructions
  1. Blitz peanut butter, oil and maple syrup until smooth and creamy.
  2. Add pumpkin, cinnamon and salt and blitz well.
  3. Spoon in to mini silicone mould or a small tray lined with baking paper.
  4. Place in the freezer until set.
Recipe Notes

Best kept stored in the freezer.

Makes 8 pieces, 121 calories each

* This mixture works better using a food processor as opposed to hand mixing as it creates a thicker and creamier consistency
