Healthy chocolate mug cake with warm caramel sauce

Healthy Chocolate Mug Cake With Warm Caramel Sauce

Ingredients
Caramel Sauce
  • 4 tbsp coconut milk
  • 1 tbsp coconut sugar
  • 1/4 tsp vanilla essence
Chocolate Cake
  • 4 tbsp wholemeal self raising flour
  • 3 tbsp low fat milk
  • 1 tbsp rice malt syrup/honey
  • 1 tbsp cacao/cocoa

Caramel Sauce
  • 4 tbsp coconut milk
  • 1 tbsp coconut sugar
  • 1/4 tsp vanilla essence
Chocolate Cake
  • 4 tbsp wholemeal self raising flour
  • 3 tbsp low fat milk
  • 1 tbsp rice malt syrup/honey
  • 1 tbsp cacao/cocoa
Instructions
  1. Make the caramel sauce first by whisking together the ingredients in a mug with a fork until well combined.
  2. Microwave in 30 seconds increments, whisking between each, until thick and dark (about 2-3 minutes)
  3. Set aside to make cake.
  4. To make the cake mix all the ingredients together in a bowl mix together, pour into mug
  5. Microwave for approx 60 seconds (depending on your microwave)
  6. Run a butter knife around the edges of the cake and turn out onto bowl
  7. Pour over caramel sauce and enjoy!
