Veggie Packed Ginger & Tofu Stir-Fry

Spices such as ginger are known to give your metabolism a great boost. Plus it tastes fantastic.

If you haven’t got tofu you could always use chicken, beef, pork or lamb instead.

  • 1 cup brown rice uncooked
  • 600 grams firm tofu
  • 1 brown onion sliced
  • 1 tbsp fresh ginger minced
  • 4 cloves garlic minced
  • 2 tbsp water
  • 2 tsp honey
  • 2 tsp coconut oil
  • 1 red capsicum sliced
  • 2 cups broccoli
  • 4 cups green beans trimmed
  • 2 carrot sliced
  • 2 tsp sesame seeds black or white
  • 1/3 cup unsalted cashew nuts chopped
  • 1/3 cup fresh coriander chopped

  • 2 tsp sesame seeds black or white
  • 1/3 cup unsalted cashew nuts chopped
  • 1/3 cup fresh coriander chopped
Ginger & Tofu Stir-Fry
Instructions
  1. Prepare rice according to packet directions. Cut tofu into cubes.
  2. Combine ginger, garlic, honey and water in a bowl and mix well. Add tofu and stir to coat.
  3. Heat oil in fry pan over medium-high heat. Add onion, capsicum, broccoli florets, beans and carrot and stir fry for 3-5 minutes or until tender crisp.
  4. Add tofu and marinade and stir fry for a further 1-2 minutes to combine flavours and heat tofu.
  5. Combine prepared rice with sesame seeds, cashews and coriander and serve alongside tofu and vegetable stir fry.
