Veggie Packed Ginger & Tofu Stir fry recipe

If you haven’t got tofu you could always use chicken, beef, pork or lamb instead.

- 1 cup brown rice uncooked
- 600 grams firm tofu
- 1 brown onion sliced
- 1 tbsp fresh ginger minced
- 4 cloves garlic minced
- 2 tbsp water
- 2 tsp honey
- 2 tsp coconut oil
- 1 red capsicum sliced
- 2 cups broccoli
- 4 cups green beans trimmed
- 2 carrot sliced
- 2 tsp sesame seeds black or white
- 1/3 cup unsalted cashew nuts chopped
- 1/3 cup fresh coriander chopped

- Prepare rice according to packet directions. Cut tofu into cubes.
- Combine ginger, garlic, honey and water in a bowl and mix well. Add tofu and stir to coat.
- Heat oil in fry pan over medium-high heat. Add onion, capsicum, broccoli florets, beans and carrot and stir fry for 3-5 minutes or until tender crisp.
- Add tofu and marinade and stir fry for a further 1-2 minutes to combine flavours and heat tofu.
- Combine prepared rice with sesame seeds, cashews and coriander and serve alongside tofu and vegetable stir fry.
