We love kitchen challenges! There is nothing we love more than seeing mums making BIG batches of delicious, healthy meals for the entire family for LOW COST!

Now that the cooler weather is here, there is no doubt warm wintery food is on everybody’s mind. That must be why this Healthy Mummy set herself the challenge to see just how many serves of soup she could make, with less than $30.

This mum made HOW MANY serves of soup with $30?

Long time Healthy Mummy 28 Day Weight Loss Challenge Member Eleanor Hannah made 30 serves of delicious, family-friendly soup for just $30! 

Eleanor says, “The hubby and I are a huge fan of soups in winter so I wanted to have enough for our snacks or lunches for 2 weeks.

“I picked some of our favourite soup recipes from the 28 Day Weight Loss Challenge and from the Healthy Mummy blog.

“I wanted to be prepared. I feel as though I’m less likely to skip a meal or grab something not so good if I have my meals and snacks prepared.” 

What types of soup did Eleanor make? 

Eleanor made 5 different types of soup (of 6 serves each) for just $30. Eleanor admits, “This works out at $1 a serve – which on our super tight budget – is great!”.

1. Chicken noodle soup

2. The rich and creamy tomato soup

Nothing beats a homemade tomato soup. When it’s rich and creamy but low in fat, you have a winner for everyone in the whole family.

3. Pumpkin and sweet potato soup

This soup has less than 300 calories per serve and is ready to eat in 25 minutes (including prep time). You can even ditch the bacon for a vegetarian option.

4. Mexican Soup

This Mexican styled soup is PACKED with kidney beans which are great for stabilising blood sugar levels. With less than 322 calories per serve and ready to go in under 20 minutes – this soup is PERFECT for the entire family.

5. Creamy chicken and corn soup

This creamy and delicious chicken and corn soup is a fantastic winter warmer AND has less than 260 calories per serve.

And here is how Eleanor is storing her soup!

Eleanor says, “I will be freezing (and have frozen) my soup in glad bags standing up (I suggest using a tray). I pour the soup into the bags. Stand them up. And pop them in the freezer.

“When I want to eat them, I either take a soup out early in the morning so they are defrosted and ready to go for lunchtime (with a quick zap in the microwave). 

“Or I will add the bag to a hot bowl of water to defrost quickly or pop into microwave safe dish for a zap in microwave for a couple of minutes.”
