Jelly Slice – The Healthy Way

 INGREDIENTS

Base

  • 1 cup rolled oats (or almond meal for GF)
  • ½ cup firmly packed dried pitted dates
  • 1 tbsp. coconut oil or pure butter, melted

Middle Layer

  • 250g light cream cheese, room temperature
  • 1 cup full cream Greek natural yoghurt
  • 2 tbsp. pure maple syrup
  • ½ tsp pure vanilla extract
  • 2 tsp. gelatine
  • 3 tbsp. boiling water

Top Layer

  • 400g ripe strawberries, washed, hulled and sliced
  • 1 cup freshly squeezed orange juice
  • ¼ tsp vanilla extract
  • 2-3 tbsp. pure maple syrup (to taste)
  • 1 tbsp. gelatine
  • 3 tbsp. boiling water

METHOD

  • Line a medium slice container with baking paper.
  • Cover dates with boiling water and let soak for 20 minutes. Drain and rinse. In a food processor, add dates, oats and melted coconut oil and pulse until mixture becomes a sticky crumb. Press into base of container until evenly spread. Refrigerate.
  • Add cream cheese, yoghurt, maple syrup and vanilla to a mixing bowl. Beat until smooth. Dissolve gelatine in the boiling water and add to cream cheese mixture. Beat a further 1 minute. Smooth mixture over base and return to refrigerator for approximately 2 hours to set.
  • After this time, add half the orange juice and all strawberries to a small saucepan. Simmer and stir over a low heat for 2 minutes until strawberries have softened. Add remaining orange juice and process until smooth. Dissolve gelatine in boiling water and add to strawberry mixture. Mix well and place in the freezer separately for 10 minutes. Remove and mix again before spreading evenly over cream cheese mixture. Cover with a tea towel and refrigerate until jelly has set, approximately 2 hours.
  • Slice into 12 pieces to serve once set.

Makes: 12 serves, 144 Calories per piece.
