Dairy & Gluten Free Chocolate Swirl Mousse (Ideal For Pregnant Mama’s)

A delicious chocolatey treat that is great to include in your healthy pregnancy eating plan when one of those sweet cravings hits.

Rich, chocolate desserts are a common craving in pregnancy but can result in excessive weight gain, poor energy levels and uneven blood sugars if not moderated at any time, but especially in pregnancy.

Dairy & Gluten Free Chocolate Swirl Mousse

The key ingredient in this mousse is banana which is high in Vitamin B6 and well know to improve energy, mood and also nausea. Bananas are also high in fibre, which is essential in pregnancy as bowels often become sluggish.

Occasionally, banana can contribute to constipation. If this is the case for you, replace ½ the banana with a handful of prunes, pureed with a small amount of boiling water if required.

  • 1 ripe banana mashed
  • 1 tbsp buckwheat or coconut flour
  • 1 tbsp raw cacao powder
  • 1 tbsp pure maple syrup
  • ¼ tsp pure vanilla extract
  • 2 tbsp coconut cream

Instructions
  1. Combine all the ingredients except the coconut cream and mix well.
  2. Using the thick cream floating on the top of the can, remove 2 tablespoons of coconut cream and gently stir through chocolate mixture to create a ‘swirl’ effect.
  3. Refrigerate for 30 minutes to thicken (optional) or freeze for 30-45 minutes to enjoy as a 'semifreddo' style dessert.
