It always helps to have a couple of recipes up your sleeve for those days when supplies are running low. This Empty Pantry Coffee Smoothie was inspired by just such a scenario and is something you can whip up with the bare minimum of ingredients.
It combines the Healthy Mummy Vanilla smoothie mix, as well as coffee, dates, rolled oats, maple syrup and cashews for a nutritious and filling smoothie that tastes great.
You can also substitute ingredients for what you have to hand. Try switching the skim milk for unsweetened almond or oat milk, the maple syrup for honey and the cashews for a different nut or nut spread.
It’s the perfect ‘everything but the kitchen sink’ recipe and an ideal breakfast for the 28 Day Weight Loss Challenge.

- 200 ml skim milk or milk of choice
- 2 tbsp Healthy Mummy Smoothie mix vanilla
- 2 dates
- 1 tbsp rolled oats
- 1 tbsp pure maple syrup
- 1/2 tsp instant decaffeinated coffee or regular instant coffee
- 4 cashew nuts
- 250 ml cold water
- 6 cubes ice

- Serve in your favourite glass and enjoy!
